Lime Pepper Taco Recipe

Ingredients (makes 3–4 tacos / serves 1–2)

  • 8–12 extra-large shrimp (peeled and deveined, tails off)
  • 6 small corn tortillas
  • 2–3 cups coleslaw mix (shredded cabbage & carrots)
  • 1–2 fresh limes, cut into wedges
  • Avocado oil spray (or avocado oil)
  • Japanese mayo (Kewpie mayo) — for drizzling
  • Lime pepper seasoning (to taste — start with 1–2 tsp)
  • Optional additional seasonings: Garlic powder, smoked paprika or chili powder, salt (if your lime pepper doesn’t already include it)

Instructions

  1. Season the shrimp Pat the shrimp dry with paper towels. Place them in a bowl and toss generously with lime pepper seasoning. Add a light spray of avocado oil to help the seasoning stick. If desired, sprinkle on a little extra garlic powder and/or smoked paprika for more depth. Let the shrimp marinate for 5–10 minutes (or up to 30 minutes in the fridge).
  2. Cook the shrimp Heat a large skillet or grill pan over medium-high heat. Give it another quick spray of avocado oil. Cook the shrimp 2–3 minutes per side until pink, opaque, and nicely charred. The lime pepper will create a flavorful, slightly caramelized crust. Don’t overcrowd — cook in batches if needed. Remove from heat.
  3. Warm the tortillas Warm the corn tortillas in a dry skillet, over an open flame, or in the microwave (wrapped in a damp paper towel) until soft and pliable.
  4. Assemble the tacos
    • Lay a warm tortilla on a plate.
    • Add a generous handful of coleslaw mix.
    • Top with 2–3 shrimp.
    • Drizzle with Japanese mayo.
    • Finish with a fresh squeeze of lime juice.
  5. Serve Plate the tacos with plenty of extra lime wedges on the side. Enjoy immediately!
